Recipe for Easy Breakfast Tacos at Home

Ingredients

  • 1 or 2 Russet Potatoes (depending on size)
  • Olive oil
  • 6 to 8 Large Eggs
  • 1/4 Tsp. Cumin
  • 1/8 Tsp. Chili Powder
  • 1/8 Tsp. Garlic Powder
  • Salt to taste
  • Black Pepper (to taste, if desired)
  • ~1 cup Shredded Cheese
  • Oregano
  • Flour Tortillas

Prep Instructions

  1. Give the potatoes an initial rinse, making sure to loosen up and remove any caked on dirt
  2. Chop the potatoes into ~1/2" cubes and place in a large bowl
  3. Fill the bowl of potatoes with water and swish around to break up any sediment, then pour into a colander to drain. Repeat once if desired
  4. Combine cumin, chili powder and garlic powder in a small dish
  5. Coat the inside of a large skillet with olive oil and place on medium heat
  6. While the skillet is warming up, whisk eggs in large bowl using a fork until well blended and almost frothy
  7. Heat another large skillet, placing as many tortillas as will fit into it (once the skillet has reached medium heat, flip the tortillas every 20-30 seconds or so until they're golden brown on either side. Then set them aside and add new batches of tortillas until you have enough for the amount of tacos you're going to be eating)

Cooking Instructions

  1. Once the olive oil just barely begins to smoke, pour in the eggs and scramble until thoroughly cooked, then place in a large bowl and set aside
  2. Make sure the skillet is clean on the bottom and add another coat of olive oil, then add the rinsed potato cubes into the skillet and sauté until golden brown edges begin to form. As you cook the potatoes, add salt and pepper to taste.
  3. Once the potatoes are ready, remove the skillet from heat and add the eggs back into the skillet
  4. Add spices to the skillet and stir mixture until evenly mixed
  5. Add shredded cheese to the skillet and stir mixture once more until evenly mixed
  6. Spread a light dusting of oregano across the top of the mixture
  7. Spoon mixture onto tortillas, garnish with your favorite salsa or hot sauce and enjoy!
